Vegetarian Recipe #17: Crockpot Citrus Chili

Yes, actually, I do cook a lot of beans in the crockpot.

Bart was dubious about this one, but when he had the leftovers three days in a row, I figured it had been a success.

Crockpot Citrus Chili
(adapted from Annie's Eats)

Serves 4

2 cups rinsed dry black beans

½ onion, chopped
1 pepper, chopped or minced (I used a combo of red and yellow bell peppers, but you can do spicier peppers if you'd like)
4 cups vegetable broth
1½ tsp. dried oregano
2 bay leaves
½ tsp salt
2 tsp minced garlic
1 tsp pureed chipotles in adobo sauce
1½ tsp ground cumin
¼ cup orange juice
¼ cup lime juice
1 T white wine vinegar

Pour the beans into the bottom of your crockpot. Add the chopped onions and peppers. Pour the broth over the top.  Add all the rest of the ingredients and stir.  Cook for 8-10 hours on low.

Serve topped with salsa, sour cream and cheddar cheese.


  1. This sounds good. I love, love chili, but have never made it before.

  2. I love a good chili, so I am definitely going to try this. My MIL recently made a chili that called for chocolate. I know mole has chocolate, but I still sometimes have a hard time getting my head around chocolate in a savory recipe. But! It was delicious and the sweetness was just perfect. I bet the same is true for the citrus in this one. Can't wait to try it!

  3. Do you, like me, wish that they sold the chipotles in adobo sauce in like...sacrament sized containers?

  4. YUM. This is perfect for me to make a massive amount and ration it for my lunches.

  5. This sounds like the citrus black beans but with more broth. Am I right? (I love the citrus black beans, by the way. Love. They are on the stand-by menu pretty much all the time.)

  6. I've been sort of testing the waters with vegetarian recipes in our house. My husband, who grew up on a beef and dairy farm, isn't too excited. I asked him if he thought he could survive 1 month without meat and his immediate, firm response was "no". :(

    It's GOOOOooooood.
